Hard red wheat is a high protein bread flour with a rich color and nutty flavour profile.
Why Fresh-Milled Flour?
Most commercially milled flour is designed for long shelf life and consistency,
not freshness. During commercial milling, the bran and germ are removed. This process strips away much of the grain’s naturally occurring nutrients, including healthy fats,
essential vitamins, minerals, and naturally occurring enzymes. The remaining
endosperm is stable but far less nutritionally complete.
To compensate, many commercial flours are later “enriched” with synthetic
vitamins and minerals to meet regulatory standards. While this restores a small
fraction of nutrients on paper, these added vitamins are not the same as those
found naturally in the whole grain. Some individuals report difficulty tolerating
enriched flours and seek alternatives that remain closer to their natural state.
At Still Waters Farm, we mill whole, intact grain — including the bran and germ
— just as it was traditionally done.
